Cook with us!  Enjoy all of the benefits of coming to a cooking class—a hands-on class taught by two Red Seal Chefs—but in the comfort of your own home!  While cooking with us we’ll go through every recipe, step-by-step, answering all of your key questions: the WHY’s, HOW’S and HOW MUCH and HOW LONG questions. 

 

Today’s Theme: Thai & Vietnamese Favourites.  Fresh salads with versatile ingredients and an authentic curry so good you'll always want a batch in your freezer.  The menu below is designed for 4 people.

Honey Dew Melon Salad with Mint & Lime

Vietnamese Grilled Chicken & Vermicelli Noodle Salad with Nauc Chom

Thai Red Coconut Vegetable Curry with jasmine Rice

Produce:

1 small honeydew melon (mango can be substituted)

½ cucumber

1 small carrot

1 onion

vegetables for curry (have 2-4 on hand: zucchini, eggplant, carrot, beans, corn or baby corn, or your favourite!)

1 bunch mint

½ bunch cilantro

10-12 kaffir lime leaves, fresh, frozen or dried

3 limes

2 green onion

2 inch piece ginger

3 cloves garlic

2 Thai red chilies

1 stalk fresh lemongrass or 2 tbsp. frozen chopped lemongrass

 

 

Protein/Dairy:

 

2 chicken breasts

½ cup peanuts

 

 

Pantry:

 

5 tbsp. fish sauce

1 tsp. chili garlic paste (sambal)

1 tsp. Thai red curry paste

1 can coconut milk (we use Aroy-D Brand)

1 small palm sugar puck (sub. Brown sugar)

1 ½ cup Jasmine Rice 

1 pkg. thin vermicelli rice noodles

¼ cup + 3 tbsp. rice wine vinegar

¼ cup + 2 tbsp. sugar

1 tbsp. honey

oil for cooking
