Cook with us!  Enjoy all of the benefits of coming to a cooking class—a hands-on class taught by two Red Seal Chefs—but in the comfort of your own home!  While cooking with us we’ll go through every recipe, step-by-step, answering all of your key questions: the WHY’s, HOW’S and HOW MUCH and HOW LONG questions. 


Today’s Theme: Our Favourite Indian Supper.  This perfectly balanced meal includes the mildly spiced creaminess from the Butter chicken with the spice of the cabbage followed by the coolness of the yogurt sauce.  Highly addictive, great for make-ahead and freezing, and even better: kids love it.  Add something new to your weekly dinner routine!

2 inch piece of ginger

4 cloves garlic

1 green chili

½ English cucumber

½ bunch cilantro

¼ piece of cabbage

3 small-medium cooking onions




2 lbs boneless skinless chicken thighs

2 cups plain, whole milk yogurt, divided

1 cup 35% cream

4 tbsp. butter




Mixed: 1 tsp. whole cumin, 1 tsp. ground turmeric

Mixed: ½ tsp. ground black pepper, 2 tsp. ground cumin, 1 tsp. ground coriander, ¼ tsp. cayenne OR Indian chili powder

1 tsp. whole cumin

1 tsp. garam masala

Mixed: 1 cinnamon stick, 1 bay leaf, 4 cardamom pods

Mixed: ¼ tsp. cayenne OR Indian chili powder, ½ tsp. ground cloves, ½ tsp. ground cinnamon, 1 tbsp. garam masala, 6 cardamom pods

1 ½ tbsp. Garam Masala

1 ½ cups Basmati Rice

1 ½-2 cups canned tomatoes (whole, puree or chopped)
