Cook with us!  Enjoy all of the benefits of coming to a cooking class—a hands-on class taught by two Red Seal Chefs—but in the comfort of your own home!  While cooking with us we’ll go through every recipe, step-by-step, answering all of your key questions: the WHY’s, HOW’S and HOW MUCH and HOW LONG questions. 

 

Today’s Theme: Delicious Fall-Inspired Recipes: ! Now is the time to cook the harvest that is over flowing at our local farmer’s markets.  Stock-up cooking in your home: 2 hearty soups & a Mexican stew that you will make all winter long! This class will produce three big pots for your household, enough for 4-6 servings. 

 

Menu:

Spiced Coconut Red Lentil

Mexican Chicken, Corn, Quinoa & Squash Soup
End of Summer Roasted Tomato & Bacon Bisque

Produce:

 

2-inch piece ginger

3 cloves garlic

½ bunch cilantro

4 sprigs thyme

2 lbs plum tomatoes

1 jalapeno

2 cups diced butternut squash

1-cup fresh or frozen corn

1 lime

2-3 yellow cooking onions

1 rib celery

1 small carrot

 

Protein/Dairy:

 

3 strips bacon

½ cup 35 % cream

3 large chicken legs

1 tbsp. butter

 

Pantry:

 

Spice Mix: 1 tbsp. coriander + 1 tsp. turmeric + ½ tsp. cinnamon + ¼ tsp. black pepper

1 small chipotle pepper in adobo

1 cup tomato puree, divided (or 4-5 tbsp. tomato paste)

1 heaping cup red lentils

1 can Full Fat Coconut Milk (we like Aroy-D brand)

¼ tsp. cayenne

1 tbsp. Mexican chili powder

½ cup quinoa

2 tbsp. masa harina (corn flour, not corn starch)

splash of brandy or about ¼ cup white wine

oil, as needed (olive, grapeseed, canola)

kosher salt, as needed

OPTIONAL:  3 cups homemade chicken or vegetable stock

OPTIONAL GARNISHES: grated cheese, sour cream green onion, tortillas, avocado, hot sauce…
