Homemade Sauerkraut

Classic Schnitzel with Creamy Mustard Sauce

3-4 sprigs of fresh dill

3 sprigs fresh thyme

2 sprigs fresh parsley

1 lemon

¼ head green cabbage

½ onion

1 small apple

1/4-½ head red cabbage (depending on size)

 

1 ¼ lb pork loin or pork leg, into 4 slices

3 strips bacon

¼ cup sour cream

1 cup milk

4 tbsp. butter

6 eggs (NOT INCLUDED)

 

¼ cup mayonnaise

1 heaping tbsp. Whole Grain Mustard (such as Kozlik’s)

2 ½ cups flour, divided

1 ½ cups breadcrumbs or panko (or a blend)

½ tsp. ground pepper + ½ tsp. ground nutmeg

1 bay leaf

2 tbsp. red wine vinegar (or other type of vinegar)

 

NOT INCLUDED:

You will need 1 tsp. salt (preferably kosher) for the sauerkraut, plus more salt for seasoning

A ½ pint (500ml) mason jar or similar container for sauerkraut

1 tsp. sugar

oil for cooking, approx.. ¼ cup
