Our favourite Indian Supper is a perfectly balanced meal including the mildly spiced creaminess from the Butter chicken with the spice of the cabbage followed by the coolness of the yogurt sauce. Highly addictive, great for make-ahead and freezing, and even better: kids love it. Add something new to your weekly dinner routine!

3-inch piece fresh ginger

1 long green or red chili
½ English cucumber
½ bunch cilantro
¼ of a medium green cabbage
3 medium yellow cooking onions

2 lbs boneless skinless chicken thighs
2 cups plain, whole milk yogurt
1 cup 35% cream
4 tbsp. unsalted butter
Pantry:
Spice Blend # 1 (Chicken): ¼ tsp. cayenne, ½ tsp. ground cloves, ½ tsp. ground cinnamon, 1 tbsp. garam masala, 6 whole green cardamom pods
Spice Blend # 2 (Chicken): 1 ½ tbsp. garam masala
Spice Blend # 3 (Raita): 1 tsp. whole cumin seeds
Spice Blend #4 (Raita): 1 tsp. garam masala
Spice Blend #5 (Rice):1 cinnamon stick, 1 bay leaf, 4 cardamom pods
Spice Blend #6 (Cabbage): 1 tsp. whole cumin seeds, 1 tsp. ground turmeric
Spice Blend #7 (Cabbage): ½ tsp. ground black pepper, 2 tsp. ground coriander, 1 tsp. ground cumin, pinch cayenne or Indian chili powder
