6 cups bread flour or 00 flour

2 1/4 tsp instant or rapid-rise yeast


1 1/2 tsp salt

1 vanilla bean, split and scraped 1/2 cup crystal sugar

1 Tbsp anise seed


1 28 ounce can crushed tomatoes

1 1/2 teaspoons red wine vinegar

1/2 teaspoon granulated garlic or garlic powder


1/2 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon dried thyme

1/4 teaspoon ground black pepper 1/4 - 1/2 teaspoon salt


2 tablespoons extra-virgin olive oil 1/2 cup walnut pieces


2 tablespoons sesame seeds Dairy:

2 Tbsp unsalted butter

2 egg


1-ounce grated Parmigiano Reggiano (1/4 cup)


6 ounces fresh mozzarella

3 ounces Gorgonzola
