Pesto Sauce

4 cups basil, loosely packed

50 g Parmesan cheese ( or Grana Padano)

3/4 cup toasted pumpkin seeds, pine nuts (traditional)

2 cloves fresh garlic

1 cup good quality olive oil

1/4 tsp kosher salt


1. Place all ingredients in the bowl of a food processor. Pulse until all ingredients are well mixed.

2. With the machine running, drizzle in olive oil and blend until smooth (30 seconds to 1 minute, depedning on desired consistency)

3. Use as desired. 

Tips and tricks:

Substitute the pumpkins seeds or pine nuts wiht whatever you have on hand. Using toasted peanuts and adding a chili to use with chowmein noodle or rice vermcelli.
