Sausage, Potato and Corn Soup
1-2 tbsp. fat
1 lb sausage meat, removed casing
1 onion, finely chopped
1 carrot, finely chopped
1 celery, finely chop
1 yellow pepper, finely chopped
1-cup cabbage, finely chopped
Handful of fresh herbs
3 or 4 potatoes, peeled and diced
1 cup of hominy or regular corn
4-5 cups of stock (chicken or pork stock)
Kosher salt, as needed
Black pepper, to taste
1. Heat a soup pot over medium high heat then add a little butter, oil, Bacon fat, or chicken fat and then add in sausage meat.
2. Fry until just cooked and then add onion; sauté until soft before adding carrots and celery.
3. Add in yellow pepper, cabbage, herbs, and corn followed by your stock. Stock should just cover everything. Season with salt and pepper. Bring up to the boil, Cover and simmer for 30 to 40 minutes until potatoes are soft. Break up a few potatoes with the back of your spoon.
