Cooking Mushrooms
Your fail-proof method for cooking all kinds of mushrooms, for all sorts of applications (side dishes, sauces, soups, pasta dishes.
2 tbsp oil (neutral, like grapeseed or sunflower)
3 cups sliced cremini mushrooms
2 tbsp butter
1-2 cloves garlic, chopped
Handful of chopped mixed herbs, such as thyme, rosemary and parsley
Kosher salt and pepper, to taste
Add ins: diced zucchini, sliced leeks, sliced red onion, diced peppers…
Heat a heavy pan over high heat; add oil, and all of the mushrooms so that they form a single layer in the pan. Immediately add about ¼ cup of water and let cook, undisturbed for about 5-7 minutes (until mushrooms are caramelized on the bottom
Lower heat and add butter, garlic and herbs; season with salt and pepper; add anything else and cook on low until desired doneness. The mushrooms can handle a long slow cook at this point.
You can continue on with this recipe for all sorts of dishes ie. Adding wine and then cream for a cream sauce. Adding stock and cream for a soup….
