Turkey, Almond & Apple Salad

A real treat in a pita, on fresh or toasted bread or just as is with some hearty romaine.

1-2 green onions, finely sliced

¾ cup diced apple (honey crisp or granny smith style preferred)

2 celery heart stalks with leaves, finely sliced

½ cup grated carrot

1/3 cup sliced almonds, lightly toasted and crushed  

2 heaping tbsp. roasted almond butter

1 tsp. curry powder

½ cup mayonnaise, or to your liking

juice of ½ lemon

1 tsp. kosher salt

2 ½ cups diced cooked turkey breast meat

  • Simply mix all of the above ingredients together.  Some like it more or less mayonnaise-y.  Taste for seasoning. Refrigerate for about 20 minutes for best flavour results.
