Green Herbs & Ham Soup

1 medium onion, small dice
3 ribs celery, small dice
2 carrots, small dice
2 cloves garlic
3 potatoes, diced
1-2 cup diced ham
1/2 cup chopped parsley
1/2 cup chopped dill
1/4 cup chopped chives
2-3 litres water or stock

1. Heat a heavy bottomed soup pot over medium heat. Add butter, olive oil or fat leftover from cooking your ham. Add onion and cook 4-5 minutes, stir occasionally, before adding celery and garlic. Cook until soft. Add garlic and cook for 1-2 minutes longer.

2. Add potato and ham. Cook stir for 3-4 minutes. Add water or stock and cook until potatoes are just cooked. Stir in fresh herbs and enjoy!

3. This soup only gets better is it is stored over night in the refrigerator.
