Take-Out Style Fried Rice

Take-Out Style Fried Rice

Make this your own!  Use up leftovers, add different vegetables..

Serves 2

2+1 tbsp. neutral oil

2 ½ cups cooked rice, cooled

1 cup cooked Ham, diced (or leftover steak, pork…)

½ cup frozen peas

1 egg, lightly scrambled

2 green onion, thinly sliced

3 tbsp. Shaoxing Cooking Wine (or dry sherry or vermouth)

2 tbsp. soy sauce

toasted peanuts, to garnish (optional)

  • Heat a large, wide frying pan over medium-high heat. 

  • When it is hot, add the first 2 tbsp. of oil followed by the rice

  • Sauté for one minute, then add ham and peas. Continue to stir and fry for one more minute

  • Push rice to the sides, add remaining 1 tbsp. oil and then egg.  Allow to cook for 30 seconds, then stir into rice.  Stir in half of the green onions

  • Add Shaoxing and soy, stir for one final minute

  • Divide onto 2 plates, top with peanuts and remaining green onion.
