4 Roma tomatoes, seeded and diced
3 green onions, finely chopped
1 clove garlic, minced
juice of 1 lemon
1-2 Tbsp chopped fresh parsley or basil
1-2 cup 3/4 good quality olive oil
1 baguette, sliced
1. Mix together tomatoes, green onion, garlic, lemon and fresh herbs. Drizzle in enough olive oil to cover the tomatoes.
2. Dip sliced baguette into the olive oil of bruschetta. Place on baking sheet and bake olive oil soaked bread in 400F oven for 7-10 minutes until golden. Top with tomato mixture and enjoy!
