Fresh Herb Tabouli

Fresh Herb Tabouli

Made with bulgur wheat, cracked and toasted wheat.  We like the fine, golden type. 

This salad keeps well and is really good with grilled meats and our Yogurt Sauce.

½ cup fine bulgur wheat

juice of 1 lemon

1/3 English Cucumber

1 small tomato

1 cup chopped fresh parsley

½ cup chopped fresh dill

½ cup chopped fresh mint

½ cup chopped fresh cilantro

¼ cup packed chopped sundried tomatoes

½ cup olive oil

1 tbsp. red wine vinegar

kosher salt, as needed

  • In a mixing bowl add bulgur wheat and stir in lemon juice and ½ cup of water.  Stir and set aside for 5-10 minutes.  The grains will absorb the liquid and plump up.

  • To the bowl add all remaining ingredients and a generous pinch of salt.  Taste for acidity and seasoning, adding extra lemon juice if you like.
