Assuming all of the gravy was gobbled up with the delicious Yorkshire Pudding a couple, for this recipe we will show you how to build flavour from scratch and without the fond (delicious brown bits on the bottom of the pan after roasting the beef)

 

Ingredients:

1/2 - 3/4 lb cooked roast beef, thinly sliced 
2 Tbsp butter + more to butter toast the buns
1 medium onion, julienned
2 Tbsp all-purpose flour
2 cups good quality beef stock
1 cup grated cheddar cheese, or your favourite cheese
salt & pepper to taste
4 brioche buns

  1. Pre-heat a frying pan on medium heat. Add julienned onions, stir to coat in the melted butter. Season generously with salt (& pepper if you would like). Allow onions to cook without stirring. This will allow the onions to pick up colour from the heat and begin to caramelize. 
  2. Continue to cook until onions are softened and caramelized. Sprinkle 2 Tbsp of flour over the onions, stirring to even coat. Cook for 30 seconds-1 minute to cook out some of the starch.
  3. Add beef stock and whisk to until thickened. Cook on a gentle simmer for 3-4 minutes, adjust consistency with a small amount of water if needed. Season generously with salt or to taste.

Bringing the sandwich together. 

  1. Pre-heat a pan on medium heat. Butter the inside of the brioche bun and place butter side down until warm and golden brown. 
  2. Place on plate. Spread your favourite mayonnaise on bottom of bun. 
  3. Add slices of roast beef, season with salt and pepper.
  4. Top beef with cheddar and a couple of generous spoonfuls of the onion pan gravy.
  5. Enjoy!
